• Some might find it a little uncharacteristic of her but I think that in the very beginnings of a relationship, she can get very shy. She's not entirely used to people flirting with her as she can come off as a little intimidating to others and she knows that.
• Once Undyne gets over the initial shock though, she's quick to take charge of your relationship, planning dates and trying to learn as much as she can about your interests. I have a personal headcanon that Undyne is teaching Papyrus how to cook because she wants to spend more time with her friends, and quickly learned to cook when he mentioned wanting to learn.
• Honestly I fully believe that Undyne would be a wonderful partner in so many different ways! She's very affectionate, full of praise, and very encouraging to her close friends and I believe that she'll take that to a ten in a relationship with you if you're comfortable with that of course.
