It wasn't that Grillby didn't appreciate having a soul mark. Not everyone got one after all. The very first words your soulmate would say to you, tattooed somewhere on your body. They appeared when your soulmate was born. The older of the pair would have to wait for their partner to be born before they got it, but the younger had it from birth. Some people, both monster and human alike, didn't have soul marks. Their destined mate had either passed away before they were born or, in the most saddening cases, died before the couple got to meet. In very rare cases marks changed, but that was only in extreme circumstances.

Summary
You work in Sunset Animal Hospital located in Sunset City, just an hour or so away from Mt. Ebott. Yes, THE Mt. Ebott. The one where the monsters all came from. Your interaction with them had been fairly minimal until the day that two skeletons walked through your hospital doors.

Summary
In this timeline, Humans began doing scientific research on magic not long after Asriel came to the surface with Chara’s body. The humans were shocked that Monsters still existed and wanted to find a way to harness magic themselves to protect humanity and finally destroy the monster threat once and for all. After realizing that humans could no longer wield magic, simple studies into harnessing magic turned into genetic modification to create a hybrid that could.
Over time, monsters were forgotten again and scientists continued to explore possibilities with crossing and mixing DNA between species. By the year 20XX they had successfully created a few human-animal hybrids. It was unknown as to whether or not these Hybrids could wield magic, as by this time there weren’t many people who even believed in magic anymore. The poor creatures were looked down upon and seen as inferior, often kept as lab animals to test new medicines and vaccines. It was not unusual for them to be abused, or even hunted down, should they manage to escape.
You are one such creature, a young canine Hybrid, born in a lab. You have narrowly escaped with your life, fleeing from humans up Mt Ebott.

Summary
Several months into the barrier being broke and monsters roaming the surface, you finally meet one. It just so happens that you lose your job by defending this one. And given that you threatened to call the cops on your sleazy drug-using ex-boss, you, uh, probably lost your house too.
But this short, punny skeleton isn't one to leave a good soul hanging.
